? cup sugar
? cup butter or margarine, softened
? teaspoon vanilla
1 egg
1-? cups flour
3 tablespoons unsweetened baking cocoa
? teaspoon salt
Crushed peppermint candies (if desired)

Espresso Filling

? cup whipping cream
2 teaspoons instant espresso
1 cup milk chocolate chips
1 tablespoon coffee liqueur (if desired)

Heat oven to 350 degrees. In large bowl, beat sugar, butter, vanilla and egg with electric mixer on medium speed, or mix with spoon until well blended. Stir in flour, cocoa, and salt until dough forms.

Shape dough by rounded teaspoonfuls into 1-inch balls. On ungreased cookie sheets, place balls about 2 inches apart. Press thumb or end of wooden spoon into center of each cookie, but do not press all the way to the cookie sheet.

Bake 7 to 11 minutes or until edges are firm. If necessary, quickly remake indentations with end of wooden spoon. Immediately remove from cookie sheets to cooling racks. Cool completely, about 30 minutes.

Meanwhile, in 1-quart saucepan, mix whipping cream and instant coffee. Heat over medium heat, stirring occasionally, until steaming and coffee is dissolved. Remove from heat; stir in chocolate chips until melted. Stir in liqueur. Cool about 10 minutes or until thickened.

Spoon rounded ? teaspoon espresso filling into indentation in each cookie. Top with decors or crushed peppermint candies.
This recipe is also good with peanutbutter mixed into the filling or Cherry syrup,lots of different ways to change it up or also just the ganache chocolate filling!

GIANT Chocolate Sugar Cookies Grade: A

For fans of chocolate, these cookies are just great. I don't think I've ever made an easier sugar cookie. I did NOT make the GIANT ones as suggested in the book. I only made two as an experiment to test the baking time. According to the recipe making the large version will only yield 8 and that's not nearly enough cookies. Plus, who can eat just one cookie? I mean, really! One?

So, I used a small cookie scoop and ended up with about three dozen. I baked them for 11 minutes and that seemed to work perfectly.

A great advantage to these cookies is that they come out perfectly round using a scoop. No need to spend time rolling them into little balls and then into sugar. They come out looking as though you did when you didn't. And the extra sugar makes them a bit too sweet.

Crispy, densely chocolate, easy, pretty, delicious. This recipe is a real keeper!
